The award-winning pie features golden pastry encasing coconut-poached prawns infused with galangal, lemongrass, chilli and ginger. Ryan Khun revealed how the recipe is made, highlighting the blend of Southeast Asian flavours that set it apart from traditional Australian pies.
From Cambodia to pie champions
Ryan and Chan Khun did not grow up eating pies in Cambodia, but since migrating to Australia they have embraced the culinary tradition. Their bakery, Country Cob Bakery, has consistently produced award-winning pies, demonstrating their mastery of the craft.
The brothers' success underscores the multicultural influences shaping Australian cuisine, with their Malaysian-inspired creation winning over judges and pie enthusiasts alike.
