The bar has already won several awards, but its service and drink quality rival those of veteran institutions.

Inside, high navy walls are adorned with delicate starling murmurations, mimicking a dusk sky. Chipper jazz fills the space, preventing it from feeling too whispery. The overall ambiance is both elegant and inviting.

Japanese culture recognizes 72 micro-seasons, and Waltz updates its menu regularly to reflect this tradition. Alongside an evergreen selection of signature drinks, seasonal offerings change frequently. During a recent visit, the best-selling British Strawberry cocktail was popular among patrons, but the standout seasonal order was the White Asparagus & Fresh Peas, made with mezcal, kefir, lemon juice, and pisco, served in delicate glassware with a small pod of salted fresh peas.
