Lidl has launched a new Wellness Wednesdays initiative for Lidl Plus users, offering 10 per cent off products in the Live Well range every Wednesday. As part of this, the retailer has teamed up with chef Miguel Barclay, creator of the One Pound Meals series, to create seven new recipes that cost £1 or less per serving.
Affordable healthy eating
Nearly 45 per cent of Brits say cost makes it harder to make healthier food choices, according to Lidl. Miguel's recipes aim to show how easy it is to create healthier, balanced meals without spending a fortune. The recipes are inspired by the Planetary Health Diet, a flexible guide developed by scientists to optimise health and sustainability.
The recipes encourage small, easy swaps, such as adding beans, pulses, or lentils to increase plant-based protein, adding more fruit or vegetables, and choosing one wholegrain daily—whether wholegrain bread, pasta or rice.
Chicken Kra Pow & Cauliflower Rice recipe
One recipe, Chicken Kra Pow stir fry and Cauliflower Rice, is packed with 23.8g of protein and comes in at under 300 calories (296 kcal). The meal costs just £1 per serving. Ingredients include ¼ cauliflower, sesame oil, 80g chicken drum fillets, garlic, fresh red chilli, green beans, fresh basil, soy sauce, salt, and pepper.
Method: Blitz cauliflower in a food processor until it resembles rice, then pan fry in sesame oil for about 8 minutes. Meanwhile, chop chicken into small pieces, season, and pan fry with garlic, chilli, and green beans for 10 minutes. Add basil and soy sauce for the last 30 seconds, then serve with cauliflower rice.
Other £1 recipes
The other six recipes are available on the Lidl website, including a Beef & Lentil Hotpot (98p), Creamy Leek, Courgette & Bean Cassoulet (74p), and Charred Sweetcorn & Sliced Pork Ramen (93p).
