The great pizza debate over crust thickness has raged for generations among aficionados. From the robust, foldable bases favoured in Sicily to the delicate, airy crusts cherished in Naples, preferences vary wildly. For those who lean towards lighter, crispier foundations, exciting news emerges from London's culinary scene. A dedicated thin-crust pizzeria named Weezie's is poised to debut in the prestigious Belgravia district this coming spring.
A New Culinary Venture from amie's Founders
This innovative dining concept is the brainchild of Abbie Roden and Will Sandbach, the entrepreneurial pair behind the successful Belgravia wine bar, amie. Transitioning from fine wines to artisanal pizza, they are establishing Weezie's at 14-15 Eccleston Yards. This prime location sits conveniently next door to their existing venue and is merely a five-minute stroll from Victoria station, promising excellent accessibility for both locals and visitors.
Executive Chef and Menu Highlights
Leading the kitchen operations will be Sumant Siani, a chef with impressive credentials from Circus Pizza in St John's Wood and Share A Slice in Brixton. While the full menu remains under wraps, patrons can anticipate a focus on New Haven-style pizzas, renowned for their charred, thin crusts. The offering extends beyond pizza to include an assortment of small plates and house-crafted signature sauces, such as a distinctive southern-style buttermilk ranch.
Curated Drink Selection and Sustainability Ethos
The beverage programme is thoughtfully designed to complement the food. It will feature amie wines available by the glass, Harbour Brewing Co beers from Cornwall, Guinness on tap, and a refined cocktail list highlighting classics like old fashioneds, negronis, and spicy margaritas. Sustainability forms a core pillar of Weezie's philosophy. The interior will be furnished predominantly with vintage or reclaimed items, and the pizza dough will be prepared using regeneratively farmed flour, emphasising environmental responsibility.
Roden and Sandbach expressed their vision, stating, 'Some nights call for a glass of amie; some nights call for a Guinness. Most nights call for a slice. We wanted to create a space where you can have it all.' Weezie's is scheduled to open its doors in April 2026, adding a vibrant, all-day dining option to Belgravia's gastronomic landscape.
