Bar Antoine's Jardin Éphémère Cocktail
Bar Antoine in London W1 has created a bright, floral summer spritz called the Jardin Éphémère, inspired by French gardens. The cocktail combines elderflower liqueur, apple juice, eau-de-vie de poire Williams, and absinthe, topped with dry champagne and soda water.
Ingredients and Preparation
The recipe serves one and includes 35ml elderflower liqueur (St-Germain recommended), 10ml good apple juice, 15ml eau-de-vie de poire Williams (Miclo suggested), 2 dashes absinthe, dry champagne (Moët & Chandon Brut Impérial), and a splash of soda water. Garnish with a rosemary sprig.
To prepare, combine elderflower liqueur, apple juice, poire Williams, and absinthe in a shaker filled with ice. Shake hard for about six seconds. Double strain into a wine glass, add fresh ice cubes, top with champagne, and finish with a splash of soda. Garnish with rosemary and serve immediately.
Background
The cocktail was developed by Leon Gasco, bar manager at Bar Antoine. It simplifies a classic French garden-inspired drink for home use while retaining its floral and fruity character.
