Food lovers and Francophiles, take note: acclaimed American chef Daniel Rose is set to open his first London restaurant. Rose, known for his expertise in French cuisine, is the culinary force behind the Michelin-starred Le Coucou in New York and La Bourse et La Vie in Paris. Now, he brings his talents to the UK capital with Le Perroquet, an all-day brasserie located inside the newly established St Regis hotel in Mayfair, which replaces the former Westbury hotel.
What to expect from Le Perroquet
Rose will stay true to his French culinary roots, offering a menu of refined classics that honor their heritage. While specific dishes are yet to be announced, the restaurant promises to focus on expertly crafted sauces, carefully prepared vegetables, roasting as an art form, and desserts that comfort and delight. The relaxed brasserie will feature a fluid menu transitioning from breakfast to dinner, designed to welcome diners seeking quick bites, spontaneous dinners, or leisurely long lunches.
Rose will collaborate with executive head chef Robert Aikens, who most recently led the reopening of Pastis in New York. Regarding the venture, Rose stated: “For me, the brasserie is one of the most complete forms of a restaurant. It’s not about invention – it’s about doing things properly, with attention and care. It should feel alive, and part of the city around it. That’s what we hope to create here.”
