3-ingredient no-churn ice cream recipe you can make at home

Foodie content creator John Gregory-Smith has shared a quick and easy three-ingredient ice cream recipe that requires no churning or ice cream machine. The base uses only double cream and condensed milk, with the sugar in the condensed milk preventing ice crystals from forming during freezing, resulting in a smooth texture.

Simple three-ingredient base

The recipe serves six to eight people and is fully customizable. To the cream and condensed milk base, Gregory-Smith adds smashed pieces of Cadbury Crunchie chocolate bars, but any fruit, chocolate bar, biscuit, or vanilla extract can be substituted. According to Gregory-Smith, “You end up with a really smooth ice cream. It’s incredibly easy and tastes so good.”

Ingredients and method

Ingredients: 600ml double cream, 300ml condensed milk, and four Crunchie bars smashed into rubble. Method: Whisk the double cream and condensed milk into soft peaks. Add the Crunchie bars and stir together. Pour into a non-stick loaf tin or Tupperware box and freeze for six to eight hours or overnight until set. Serve immediately.

Raspberry ripple variation

For a fancier version, Gregory-Smith also offers a raspberry ripple ice cream. Start with the same cream and condensed milk base, swap the Crunchie for 200g raspberries and add two tablespoons of rose water. Pop another 300g of raspberries into a sieve over a bowl, squish them to collect the juice, add half the juice to the cream mixture and fold lightly. Spoon the remaining juice over the top and ripple through before freezing for six hours or overnight. Serve with crushed meringues.

Alternative: Strawberry granita

For those who prefer a less creamy dessert, the team at Gelupo in London shared a three-ingredient Strawberry Granita recipe with Metro. Makes about 800ml, serving four to six. Ingredients: 500g frozen strawberries, 250ml chilled water, and 100g caster sugar. Optional: 150ml whipping cream whipped to soft peaks with 1 tablespoon caster sugar for serving. Method: Chill serving glasses for at least 20 minutes in the freezer. Blend frozen strawberries, water, and sugar to a slushy consistency. Serve immediately in frozen glasses, topped with sweetened whipped cream if desired.
